To make the wine stable for bottling we add bentonite, a fining agent. Whole cluster pressing has an additional advantage of requiring only half the fining agent to stablize the wine. Our philosophy of making wine is to do only what is necessary to achieve the results we are seeking: filter and fine moderately, handle gently.

Red grapes bypass the press and go directly into the French/Swiss Delta E4 crusher. Our Wacasha pump, an American-built unit from Wisconsin, directs the grapes to the crusher. The Delta E4 can remove the stems and crush, if so desired.
